We have passionfruit in abundance outside our door. For my Breakfast Passionfruit Cheese Toast, • 4 slices wholegrain bread • 200g fat-reduced ricotta -fresh passionfruit pulp Ricotta Cheese and Passionfruit Sponge Cake FillingBeat 125g of creamed goats ricotta cheese with electric beaters until smooth. Add the pulp of several passionfruit and a cup of icing sugar. Beat until smooth and creamy. Passionfruit, Strawberry and Brandy CoulisI'm making coulis to use for dessert and to freeze the leftovers for later use in ice cube trays, using passionfruit, sugar, lemon juice, strawberries and a little liqueur. Sieve or puree your choice of fruit, sweater to taste and add a dash of your preferred liqueur or fortified wine to make a delicious (fruit sauce) coulis, Pass through a fine sieve to remove the seeds and refrigerate until needed. For a thickener coulis, you cook the fruit over a gentle heat, stirring frequently, until it has reduced to to a paste. Strain out any seeds after pureeing. The pulp of dozen large passionfruit
The zest and rind of a large lemon. 400 grams of caster sugar .4 egg Place butter and sugar into a saucepan over slow heat until melted. Remove from heat. Add beaten eggs and passionfruit pulp with an electric mixer. Pour in melted butter stirring all the time over the heat. Stir until it thickens. Cool and bottle.

*Substitute natural yogurt for cream Below is how I have Pavlova (on the rare occasions I have refined sugar) these days. You can hardly tell that it is served with natural yogurt, rather than cream. I don't cook my own these days, as that's a bit of a waste of oven heating, for two small serves for two people, when we can purchase mini-pavlova shells in the store. I will continue to use yogurt rather than cream on those rare occasions when I want to enjoy this dessert. A twelve person serve would be too big for us and would tempt over indulgence. No way would I use artificial sweetener.
